Ingredients (serves 10)
- 480g unsalted butter
- 900g caster sugar
- 10 free-range eggs
- 280g chocolate drops
- 110g cocoa powder
- 220g sieved plain flour
- Dark chocolate chips
- White chocolate chips
- 1 bar of dark chocolate
- Strawberries
- Blackberries
Method
- Gently melt butter and sugar
In a pan, melt the butter and sugar slowly over low heat, stirring continuously until it becomes a glossy, silky mixture. - Infuse with chocolate
Add the dark chocolate drops and stir until fully melted and luxuriously smooth. Remove from heat to preserve the delicate chocolate flavour. - Cool
Allow the mixture to rest until it reaches 37–40°C. - Whisk the eggs
Break the eggs into a clean bowl, whisking them until pale and airy, this lightness is the secret to the brownie’s delicate texture. - Marry eggs and chocolate
Gently fold the eggs into the chocolate mixture until completely harmonious, creating a sumptuous, glossy batter. - Incorporate dry ingredients
Sieve in the flour and cocoa powder, folding with care to maintain a velvety consistency. - Prepare your tray
Line a baking tray with parchment paper and pour in the mixture, spreading it evenly to create a perfect base. Add a sprinkling of white and dark chocolate chips. - Bake to luxurious perfection
Bake in a preheated oven at 180°C / 160°C fan / 350°F / Gas Mark 4 for 30–35 minutes, until the surface is set yet the heart remains decadently fudgy.

Serving and Presentation
- Allow the brownies to cool slightly to retain their molten, fudgy centre.
- Finish with a delicate grating of dark chocolate, add your strawberries and blackberries for added decoration.
- Store in an airtight container for up to four days.
