Ragdale’s Chocolatey Atholl Brose
Whoever deserves your thanks this Mother’s Day, it’s your chance to show them how loved and appreciated they are. We’ve put a chocolatey twist on our breakfast classic, Atholl Brose, so you can truly indulge them with breakfast in bed done the Ragdale way.
Serves 4
Ingredients:
175g medium oatmeal
4 tbsp clear honey or maple syrup
500g low fat natural yogurt or coconut yogurt
2 tbsp cocoa powder
1 tbsp chocolate chips
1 tbsp desiccated coconut
1 tbsp chia seed
Method
Pre-heat the grill. Sprinkle the oatmeal onto a baking sheet and toast it lightly until golden brown. Leave it to cool.
In a large mixing bowl, stir together 3 tbsp of the honey, 2 tbsp cocoa powder and the yogurt, then mix in the cooled oats. Pour the mixture into serving glasses.
Chill until ready to serve and top with a sprinkling of chocolate chips, desiccated coconut and chia seed for the perfect finish.
Top Tip: Make this the night before and chill in the fridge overnight – it will taste even better at breakfast time!
